Chocolate Veggie Oatmeal bites

I've been making these oatmeal bites for a while now, and once in a while I like to mix it up.
I previously posted one version of this recipe using fresh carrots and my kids love them, but I thought of  making another variety with a different kind of vegetable to mix things up.

For this recipe I used my homemade spinach powder in place of fresh vegetables. This recipe works great when you don't have any fresh veggies in hand and want to use different kinds of veggie powder instead. If you don't have homemade veggie powder, you can use any kind of greens powder to give these oatmeal bites an extra nutrient boost.

Start by mixing all the ingredients together except for the oats and well combined. Then mix in the oats. If the mixture is not the right consistency you can add an additional splash or two of milk to the mixture.

 Next, shape into bite size circles and store in the refrigerator for a few hours to set.
I usually make these the night before and serve it for the kids' breakfast the next morning.

Chocolate Veggie Oatmeal Bites

4 Tbsp cocoa powder/ hot chocolate powder
2 Tbsp peanut butter
2 Tbsp maple syrup
1-2 splashes of milk
1/4 tsp veggie powder
5 pouches of oatmeal (about 1 and 1/4 cup)
Mix together all the ingredients except the oats until well combined. Stir in the oats and mix well. Shape into bite sized circles. Let set in the fridge for a few hours before serving.
